2 Wine of the Month: 2017 High Ridge Cabernet Sauvignon - Mount Ida Reserve

In honor of the new year and new beginnings, we are launching a new Wine of the Month feature! Each month we will highlight one of our favorite Mount Ida wines; perhaps a soon to be sold out favorite, or a sneak peek of a not yet released vintage. We will present tasting notes as well as a little education on the history of the varietal(s) and our own winemaking process.

Each month we will also offer a case discount on the featured wine, don’t miss it!

For the month of January we are featuring our 2017 High Ridge Cabernet Sauvignon. Our Cab Sauv is always a guest favorite, and our 2017 vintage has proven to be a cellar highlight; no surprise given that 2017 was one of the best recent years for red grapes in Virginia. The hot, HOT dry summer of 2017 provided the perfect conditions for robust and concentrated flavor in the grapes. 

 

Cabernet Sauvignon, to be sure, can be counted among the world’s most prominent red varietals. Originating in France, it is now grown in nearly every prominent wine producing country, and thrives in an extremely diverse variety of climates (including here in Virginia wine country). While Cab Sauv has become one of the world’s most popular single varietal wines, the grape is actually a hybrid propagated by crossing Cabernet Franc and Sauvignon Blanc. Its prominence in wine-making began in the 18th century in the Medoc region of France, where it is one of the five Noble grapes used for production in Bordeaux wines.

 

Our 2017 Cab Sauv is comprised of 75% Cab Sauv and 25% Cab Franc and aged in a combination of new and neutral French oak, this wine has flavors of black pepper, rich stewed plums, and blackberries. As is typical for a classic Cabernet Sauvignon, it is deeply complex and full bodied with mellow tannin; and pairs perfectly with rich roasted meats and hearty flavors like mushrooms and strong cheeses.
