Last week we moved away from bottling our white wines to darker hues with our 2017 Rosé and our 2016 Cabernet Sauvignon.
Nothing says spring and summer sipping like a light rosé! Our 2017 vintage was made from Cabernet Sauvignon grapes, giving the wine their trademark spice and red currant flavors. We aged our Rosé in stainless steel tanks to preserve its acidity, while also allowing the grapes to shine without any additional oak-flavors.
Continuing with our Cabernet Sauvignon grapes, our 2016 vintage finished ageing in French oak barrels before we bottled it. Unlike new barrels, our neutral oak didn’t impart many flavors, but allowed oxygen to slowly develop the wine. You will be able to find earthy notes of mushrooms and leather along with stewed blackberries in the wine; perfect for cool evenings or enjoying with hearty meals.
